2 ripe mashed bananas

2 eggs

2 TBSP rice flour

1 TBSP sugar

¼ tsp cinnamon (optional)

Instructions

  • Combine all the ingredients in a mixing bowl.
  • Lightly grease a frying pan with canola oil and heat over medium heat.
  • Pour a small amount of the batter into the pan and tilt the pan immediately so that the batter will spread over the entire bottom of the pan.
  • Flip the pancake when it starts to bubble and fry until golden .
  • Drizzle honey over pancakes or add sliced strawberries to taste
