Ingredients

1 ½ cups rice flour

¼ tsp salt

¼ tsp cinnamon

2 TBSPs oil

⅓ cup sugar

1 egg

½ cup water (or ¼ cup water + ¼ cup freshly squeezed orange juice)

1 large banana, mashed

2 tsp baking powder (optional, depending on the diet)

¼ tsp (1.25 ml) cinnamon

2 TBSP (30 ml) oil

60 gram sugar

1 egg

120 ml water (or 60 ml water + 60 ml freshly squeezed orange juice)

1 large banana, mashed

2 tsp (10 ml) baking powder (optional, depending on the diet)

Instructions

  1. In one bowl, mix all the dry ingredients: rice flour, salt, cinnamon, sugar (and baking powder if using).
  2. In another bowl, combine the wet ingredients: egg, mashed banana, water (or orange juice), and oil.
  3. Gradually add the dry mixture to the wet ingredients and stir until smooth. If the batter is too thick, add a little more water.
  4. Using two teaspoons, carefully drop small amounts of batter into hot oil. Work in small batches.
  5. Fry until golden brown, then remove and place on absorbent paper to drain excess oil.
  6. Roll in a mixture of sugar and cinnamon for extra flavor.
