60 gram sugar
1 egg
120 ml water (or 60 ml water + 60 ml freshly squeezed orange juice)
1 large banana, mashed
2 tsp (10 ml) baking powder (optional, depending on the diet)

Instructions
- In one bowl, mix all the dry ingredients: rice flour, salt, cinnamon, sugar (and baking powder if using).
- In another bowl, combine the wet ingredients: egg, mashed banana, water (or orange juice), and oil.
- Gradually add the dry mixture to the wet ingredients and stir until smooth. If the batter is too thick, add a little more water.
- Using two teaspoons, carefully drop small amounts of batter into hot oil. Work in small batches.
- Fry until golden brown, then remove and place on absorbent paper to drain excess oil.
- Roll in a mixture of sugar and cinnamon for extra flavor.
