Instructions
- Cut 2-3 medium sized potatoes into small cubes.
- Boil potatoes in water and salt.
- Place potatoes in air fryer or roast in oven until crisp (around 10-15 minutes)
- In a small pan, heat olive oil then add minced garlic, cilantro, lemon, and condiments.
- Mix the potatoes with the garlic mixture.
- Top with shallots and cilantro.
