½ cup quinoa

⅓ cup walnuts

¼ cup cherry tomatoes

1 cup romain lettuce (chopped)

½ avocado

2 TBSP lemon juice

1 TBSP oil

Peach (sliced)

1 cup spinach

Pink lady apple (sliced)

½ tsp Dijon mustard

1 tsp sea salt

¼ tsp black pepper

40 grams walnuts

41 grams cherry tomatoes

75 grams romain lettuce (chopped)

½ avocado

2 TBSP (30 ml) lemon juice

1 TBSP (15 ml) oil

Peach (sliced)

30 grams spinach

Pink lady apple (sliced)

½ tsp (2.5 ml) Dijon mustard

1 tsp (5 ml) sea salt

¼ tsp (1.25 ml) black pepper

Instructions

  • Boil ½ cup (90 grams) of quinoa with one cup of water until softened.
  • For the dressing: mix lemon juice, oil, and mustard along with condiments.
  • After cooling, place quinoa in a salad bowl and add in the remaining ingredients.
  • Add dressing and decorate with sprinkled walnuts.
