Ingredients

½ cup old fashioned oats

2 egg whites or 1 large egg

1 can (14 oz) diced tomatoes

1¼ pounds lean ground turkey breast

1-2 tsp chili powder (to taste)

1 tsp oregano

1 package (10 oz) frozen Spinach, defrosted, squeezed dry, and finely chopped

¼ cup healthy ketchup (no added sugars in the ingredients) or 2 TBSP tomato paste

567 grams lean ground turkey breast

1-2 tsp (5-10 ml) chili powder (to taste)

1 tsp (5 ml) oregano

1 package (283 grams) frozen Spinach, defrosted, squeezed dry, and finely chopped

59 ml healthy ketchup (no added sugars in the ingredients) or 2 TBSP (30 ml) tomato paste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix together the oats, egg whites, and tomatoes.
  • Add the turkey, chili powder, and oregano.
  • Mix in the spinach until well blended.
  • Season to taste with salt and pepper.
  • Transfer mixture to an 8x5x3 inch (20x13x8cm) loaf pan and gently pat down.
  • Bake uncovered for 45 minutes.
  • Remove meatloaf from oven and spread ketchup or tomato paste over the top.
  • Return to oven and continue baking for 15–20 minutes more (or until meat thermometer temperature reaches 165°F [74°C]). Cool a bit before slicing.
