3 cups rice flour
1 cup sugar
½ cup canola oil
2 egg yolks
7 TBSP cold water
5 apples, peeled and cored, cut in to thin slices
½ tsp cinnamon
1-2 tsp natural lemon juice from freshly squeezed lemon

450 grams rice flour
200 grams sugar
118 ml canola oil
2 egg yolks
7 TBSP (105 ml) cold water
5 apples, peeled and cored, cut in to thin slices
½ tsp (2.5 ml) cinnamon
1-2 tsp. (5-10 ml) natural lemon juice from freshly squeezed lemon
1-2 tsp (5-10 ml) brown sugar

Instructions
- Preheat oven to 350° F (180° C).
- To prepare the dough, mix rice flour and sugar in a large mixing bowl.
- In a separate bowl, whisk the yolks, oil, and water.
- Add the egg mixture to the flour mixture and mix until a crumbly texture is achieved.
- Set aside 1 cup (236 ml) of the dough mixture and press the rest of the dough into a lightly greased cake pan (no. 26).
- Sprinkle the apple slices with cinnamon, lemon juice, and brown sugar.
- Arrange apple slices over the dough, and then add the remaining dough crumbs on top.
- Bake for 40-45 minutes until golden.
- Once the cake is cool, cut into squares and serve.
