Easy Egg Sliders

Ingredients

4 hard-boiled eggs per variation

1 TBSP sesame seeds (optional, for garnish)

For BLT:

4 slices bacon

1 tomato (thinly sliced)

4 small leaves of butter lettuce (or any soft lettuce)

Freshly ground pepper

Salt

Sesame seeds (optional)

For Salmon and Arugula

4 small and thin slices of smoked salmon

A handful of arugula lettuce

4 thin slices of cumcumber

2 tsp of pesto

For Chicken Kimchi

A little bit of leftover shredded chicken breast (cooked or grilled)

2 TBSP of Kimchi

Instructions

  1. Boil the eggs for 8 minutes until hard-boiled. Immediately cool them in cold water and peel carefully. Slice each egg lengthwise into halves.
  2. (Optional) Heat a dry skillet over medium heat. Add the sesame seeds and toast them for 2–3 minutes, stirring frequently, until golden brown and fragrant. Remove from heat and set aside to cool.
  3. Assemble the sliders using one egg half as the base and another as the top bun for each slider. Optionally, trim a thin slice off the rounded bottom of the base egg half to keep it stable.
  4. BLT Slider: Cook the bacon in a pan until crispy. Let it cool slightly. Place a leaf of lettuce and a slice of tomato on one egg half. Add a piece of crispy bacon on top. Cover with the other egg half to form a slider.
  5. Salmon & Arugula Slider: Place a little bit of arugula letuce on and a thin slice of cucumberone half,. Add ½ tsp of pesto and the salmon on top.  Top with the other egg half.
  6. Chicken & Kimchi Slider: Add shredded leftover chicken to one egg half, followed by a small scoop of kimchi for tangy spice. Cover with the other egg half.
  7. Optional Garnish: Sprinkle the roasted sesame seeds on top of each slider for added flavor and presentation, or secure each slider with a toothpick for easier handling.
