1/2 cup crumbled feta cheese or hard goat cheese

Instructions
- Peel the cucumber with a vegetable peeler. Cut it in half and remove the soft core. Then cut the hollowed-out cucumber into small cubes.
- Cut the tomatoes into small cubes.
- Peel the red onion, cut it in half, and then slice it into very thin half-rings.
- Place everything in a bowl.
- Crumble the feta (or goat cheese) on top.
- Pit the olives and cut them into small pieces or rings. Sprinkle over the salad.
