Instructions
- Combine the olive oil, lemon juice and zest, garlic, paprika, thyme, salt and pepper in a large bowl or zip-top bag.
- Add the chicken thighs and turn to coat.
- Refrigerate and let marinate for at least 4 hours, up to overnight.
- Preheat broiler. Line a large baking sheet with foil.
- Place the chicken thighs on the prepared baking sheet. Discard any excess marinade.
- Broil for about 5 minutes per side, until cooked through.
