Ingredients

Ingredients for the dough
1 cup of water.
1 tsp oil or ghee (for IBD-AID Ghee is phase 3)
Oat flour

Stuffing ingredients:
1 carrot
½ green banana/plaintain
2 TBSP farmers cheese
¼ tsp turmeric
¼ tsp cumin
¼ tsp ginger powder
¼ tsp cilantro
Salt
Pepper

1 carrot
½ green banana/plaintain
2 TBSP (30 ml) farmers cheese
¼ tsp (1.25 ml) turmeric
¼ tsp (1.25 ml) cumin
¼ tsp (1.25 ml) ginger powder
¼ tsp (1.25 ml) cilantro

Instructions

Flatbread

  1. Boil the  water
  2. Add a teaspoon of oil or ghee according to phase.
  3. Add oats flour one spoon at a time until it feels "doughy"
  4. Let it rest 15 minutes
  5. Make small balls and roll it like a tortilla - dust with oat flour to prevent sticking

(this cooked by itself is good for making roti/tortilla)

Stuffing

  1. Finely grate a carrot
  2. Add half boiled and mashed green banana/plaintain
  3. 2 tbsp farmers cheese
  4. Dash of turmeric, cumin, ginger powder, cilantro and salt/pepper
  5. Mix it all
  6. Taste test the stuffing and adjust as needed

Final Making Step

  1. Heat a pan
  2. Take the rolled uncooked roti/tortilla
  3. Spread the mix on roti
  4. Take another uncooked roti and close on all sides
  5. Place stuffed paratha on pan and cook with oil/ghee/butter on both sides

Quintessential Indian breakfast - paratha. It's basically a stuffed flatbread. This one is oat flour paratha stuffed with carrots, boiled+mashed green banana and farmer's cheese. Usually paratha is eaten with plain yogurt but used labneh for probiotic variety. Stuffing has a dash of turmeric, cumin powder, ginger powder, salt, pepper and cilantro for flavor - you can flavor it any way you like.
