Ingredients

1 TBSP olive oil

16 oz fresh green beans- trimmed

¼ medium onion- sliced

1 garlic clove

¼–⅓ cup (homemade SCD legal if necessary) bone broth. See (related recipe)

¼ tsp salt plus more to taste

⅛ tsp freshly ground pepper

¼ tsp lemon zest

Instructions

  1. Heat olive oil in a large skillet.
  2. Add garlic, sliced onion, trimmed green beans, salt and pepper to the skillet.
  3. Sauté for 4-5 minutes until onions begin to caramelize.
  4. Add bone broth, cover and simmer for 4-5 minutes.
  5. Raise the heat, remove the lid and reduce/boil until all of the liquid has been absorbed.
  6. Taste and add salt/pepper if desired.
  7. Toss green beans with lemon zest.
  8. Keep warm in a  170°F (76.7°C) oven until the rest of the meal is ready or serve immediately.  Enjoy!
