Ingredients
1 cup water
2 cups low sodium chicken or vegetable broth (with no added preservatives)*
1 cup unsweetened almond milk
1 cup steel-cut oats or groats
4 oz cubed tofu or cooked chicken (ground)*
2 TBSP miso (refrigerated)

160 grams steel-cut oats or groats
113 grams cubed tofu or cooked chicken (ground)*

Instructions
- Add water, chicken broth, and almond milk into a pot and bring it to a boil while stirring occasionally.
- Add oats to the boiling mixture and cook on medium heat for 15-20 minutes.
- Add cubed tofu or ground cooked chicken and continue to cook until oats are soft and most of the liquid is absorbed.
- Turn off heat and let it cool for 5 minutes.
- Add miso and mix well.
- Set aside one portion of savory chicken oats for lunch tomorrow.
