Ingredients

1½ TBSP olive oil

5 cloves garlic, peeled and chopped fine

2 lemons, juiced

½ tsp ground cumin powder

¼ tsp ground clove powder

1 tsp chili powder

½ onion, peeled and chopped fine

2 large tomatoes, chopped

2 lemons, juiced

½ tsp (2.5 ml) ground cumin powder

¼ tsp (1.25 ml) ground clove powder

1 tsp (5 ml) chili powder

½ onion, peeled and chopped fine

2 large tomatoes, chopped

Instructions

  • In an oven-proof baking pan, mix the olive oil, garlic, spices, and lemon to make a rub.
  • Place the salmon in the dish and coat with the rub.
  • Then add in the onions and tomatoes around fish.
  • Bake for approximately 30 minutes at 350°F (180°C or gas mark 4) with a foil covering the dish.
  • Uncover and allow to rest in oven for a few more minutes to dry out excess moisture (but do not let it get too dry).

Notes

The onions and tomatoes around this salmon keep it moist through the baking process. You could also add in vegetables of your own choice such as sliced zucchini or mushrooms. Alternately, you may use a different kind of fish.
