Ingredients
5 ounces butter lettuce
1-2 TBSP sunflower seeds*
½ cup fresh whole blueberries
Pink Dressing
ingredients
1 TBSP red wine vinegar
1½ TBSP sunflower oil
5-8 fresh whole blueberries
1 TBSP honey
100 g butter lettuce
1-2 TBSP (15-30 ml; 10-15 grams) sunflower seeds*
75 grams fresh whole blueberries
Pink Dressing
ingredients
1 TBSP (15 ml) red wine vinegar
1½ TBSP (22 ml) sunflower oil
5-8 fresh whole blueberries
1 TBSP (15 ml; 20 g) honey
Instructions
- Chop the lettuce to desired cut for eating (if it has not come pre-chopped).
- Add in the blueberries and kernels as the salad topping.
- Drizzle the dressing onto the lettuce and serve.
Pink Dressing

- Using a small immersion blender (use the jar attachment if you have one), combine all the elements for the dressing. Alternately, you can whisk together in a small bowl.

Notes
*For SCD: Wait for at least 3 months after symptoms have cleared to try any kind of seeds. The dressing for the recipe will come out a pinkish color from the blueberries. It is fun for the kids to eat a "blue" dotted salad with a "pink" dressing on top.
