1 pound carrots, peeled and ends trimmed
1 TBSP peanut or olive oil
¼ tsp dried dill flakes
¼ tsp salt

1 TBSP (15 ml) peanut or olive oil
¼ tsp (1.25 ml) dried dill flakes
¼ tsp (1.25 ml) salt
⅛ tsp (0.625 ml) black pepper

Instructions
- Chop the carrots lengthwise into small strips that resemble French fries.
- Mix together with other ingredients in a flat baking pan/tray and allow to cook at 375°F (190°C or gas mark 5) for 20-30 minutes.
- Flip the carrots halfway through so they can be cooked on all sides. The carrots should be crisp and lightly browned.

Notes
The carrot fries are sweet and scrumptious. You can add a variety of other roasting veggies such as celeriac and beetroot to create a multicolored effect.
