Ingredients

1 pound ground chicken

1 clove garlic, peeled and grated fine

2 scallions, ends trimmed and chopped fine

½ tsp dried parsley

½ tsp crushed fennel seed

1 TBSP sesame oil

½ TBSP honey

salt and black pepper to taste

olive oil for coating pan

½ tsp (2.5 ml) crushed fennel seed

1 TBSP (15 ml; 14 grams) sesame oil

½ TBSP (22 ml; 10 grams) honey

salt and black pepper to taste

Instructions

  • Preheat oven to 350°F (180°C or gas mark 4).
  • Mix together all ingredients in a small bowl.
  • Coat a baking tray with the olive oil.
  • With wet hands, roll the chicken mixture into small sausage strips about 1½ inches long by ½ inch wide (3.8 cm long by 1.3 cm wide).
  • Space them evenly apart on the tray.
  • Press down gently to flatten them slightly so they cook evenly through.
  • Bake for approximately 25-30 minutes in a preheated 350°F (180°C or gas mark 4) oven, or until done.

We wanted to include a recipe for making homemade "sausages" that can be served with eggs, toast, fruit, and whatever other goodies you put on the table. So whether it is just you sitting down with the morning paper for a good hearty breakfast, or having family and friends over for a Sunday morning gathering, roll out the strips and get them baking!
