⅛ tsp baking soda
¾-1 cup honey

¾-1 (177-237 ml) honey

Instructions
- Remove peel from fruit, leaving a bit of pith on the peel.
- Cut peel into thin slices.
- Cover with water and add ⅛ tsp baking soda.
- Simmer about 1 hour until tender.
- Drain and return to pot.
- Cover with honey.
- Simmer until half the liquid is gone.
- Add whisky if desired.
- Simmer until all liquid is gone. Watch carefully in last stages for scorching.
- Spread on parchment paper or non-stick surface to cool.
- If a small amount of liquid remains, don't worry - it will set nicely.
