Instructions
- Beat together the egg yolks, water, honey and salt until well mixed.
- Stir in the dry curd cottage cheese.
- Add almond flour, stirring until thoroughly blended.
- Mix in raisins.
- Beat the egg whites until stiff peaks form and fold into cheese mixture.
- Add oil to large skillet until it is about ⅛-¼ inch (0.3-0.6 cm) deep and heat.
- For each latke, drop about ¼ cup cheese mixture into hot oil.
- Fry on each side until golden brown.
- Add oil to pan as needed.
- Drain latkes well on absorbent paper.
- Serve hot with french cream (SCD yogurt made with half and half or cream) or applesauce if desired.
