Instructions

  • Beat eggs until light and foamy.
  • Mix in the honey, salt, cinnamon, and water until blended.
  • Stir in chopped apple, almond flour, and grated lemon peel; mix well.
  • Heat about ⅛ to ¼ inch (0.3-0.6 cm) of vegetable oil in heavy skillet.
  • For each latke, drop about ¼ cup (60 ml) apple mixture into hot oil.
  • Flatten slightly.
  • Fry on each side until golden brown.
  • Add oil to pan as needed.
  • Drain latkes well on absorbent paper.
  • If you like, drizzle additional honey plus cinnamon over hot latkes. Serve immediately.
