Instructions
- Beat eggs until light and foamy.
- Mix in the honey, salt, cinnamon, and water until blended.
- Stir in chopped apple, almond flour, and grated lemon peel; mix well.
- Heat about ⅛ to ¼ inch (0.3-0.6 cm) of vegetable oil in heavy skillet.
- For each latke, drop about ¼ cup (60 ml) apple mixture into hot oil.
- Flatten slightly.
- Fry on each side until golden brown.
- Add oil to pan as needed.
- Drain latkes well on absorbent paper.
- If you like, drizzle additional honey plus cinnamon over hot latkes. Serve immediately.
