Ingredients

1 spaghetti squash (about 3 pounds)

2 tsp butter

½ cup freshly grated Parmesan

salt to taste

pepper to taste

10 grams butter

50 grams freshly grated Parmesan

salt to taste

pepper to taste

Instructions

  • Prick squash about 10-15 times with a fork.
  • Add squash whole to a pot of boiling water, and boil for 35-45 minutes or until soft when pressed.
  • Cool, cut in half, and scoop out seeds.
  • Separate squash into strands with fork and place in sauté pan with 2-3 TBSP water.
  • Cook over medium heat until squash is tender.
  • Add butter and cheese and mix until melted.
  • Salt and pepper to taste.
  • Serve with additional grated Parmesan.
