8-10 Roma tomatoes, skinned and chopped
1-2 cloves garlic, minced fine
½ pound mushrooms (cremini are nice), chopped
8 sundried tomatoes
¾ pound ground beef
1 TBSP olive oil
1 tsp dried basil
1 tsp dried oregano
1 tsp salt
pinch dried red pepper flakes (optional)

340 grams ground beef
1 TBSP (15 ml) olive oil
1 tsp (5 ml) dried basil
1 tsp (5 ml) dried oregano
1 tsp (5 ml) salt

Instructions
- Pour 1 cup boiling water over sundried tomatoes and let soak until soft.
- Chop sundried tomatoes and reserve soaking water.
- Put chopped Roma tomatoes, sundried tomatoes, and soaking water in large pot.
- Sauté mushrooms and garlic in olive oil and add to tomatoes.
- Sauté ground beef, drain fat as desired, and add to tomato/mushrooms.
- Add spices.
- Heat pot to boiling over medium heat and reduce to a simmer.
- Simmer, covered, at least one hour.
- Taste and adjust seasonings if necessary.
- Enjoy over spaghetti squash, winter squash, and steamed vegetables.
