1 ripe banana
1 egg
¼ tsp baking soda
2 TBSP almond flour (approximately)
3 TBSP SCD cottage cheese (farmers cheese and SCD yogurt)

3 TBSP (45 ml) SCD cottage cheese (farmers cheese and SCD yogurt)

Instructions
- Mash the banana in a shallow bowl with a fork.
- After it is mashed, push it to one side of the bowl to make room for the egg.
- Add the egg and baking soda and scramble until soda is dissolved.
- Add flour to the egg mixture until desired batter consistency is reached.
- Pour out three pancakes onto a greased flat medium hot grill.
- Cover the grill with a cookie tray to help form the delicate cakes.
- Cook for about 3 minutes on one side (or until they are formed enough to flip).
- Flip, cover, and cook for another two minutes.
- Put one TBSP of "cottage cheese" on each half of the cake and fold in half.
- Serve topped with compliant syrup of your choice.
