1¼-inch fresh ginger root

2 cloves garlic

3 TBSP vegetable oil

¼ tsp chili powder

1 tsp ground cumin

½ tsp ground turmeric

1 tsp ground coriander

600 grams frozen spinach (thawed)

¼ tsp (1.25 ml) chili powder

1 tsp (5 ml) ground cumin

½ tsp (2.5 ml) ground turmeric

1 tsp (5 ml) ground coriander

600 grams frozen spinach (thawed)

120 ml SCD yogurt

Instructions

  • Slice the onions, grate the ginger, and crush the garlic.
  • Heat the oil and fry the onion, ginger, and garlic till golden brown (I used a saucepan but a Karahi would be better).
  • Add the chili powder, cumin, turmeric, and coriander, and fry for about a minute.
  • Add the spinach and salt to taste.
  • Cover and simmer for 15 minutes.
  • Stir in yogurt and heat through but do not allow to boil.
