60 ml mayonnaise

Instructions
- Mix the almond flour, baking soda, and salt together in a medium sized bowl.
- Beat the eggs and mayo in another bowl with a hand held mixer.
- Pour the egg mixture into the flour mixture and beat with a handheld mixer.
- Add the orange juice a little at a time until a cake batter consistency.
- Add the chopped nuts, orange peel and raisins.
- Spoon batter into papered or greased muffin tins and bake at 375°F (190°C) for 20 minutes.
