1-inch square of Blue Cheese crumbled

2 slices sweet onion, red or Vidalia

honey

a small sprig minced parsley

pinch of dried rosemary (optional)

2.5-cm square of Blue Cheese crumbled

2 slices sweet onion, red or Vidalia

Instructions

  • Heat a skillet.
  • Add butter and sauté onions and pears over medium heat until pears caramelize and onions are translucent. Remove to a plate.
  • Put beaten egg in pan and tip from side to side, pulling back a little so liquid will run from surface.
  • Add blue cheese and then pear mixture.
  • Fold omelet and transfer to a plate.
  • Sprinkle with parsley and add a tiny drizzle of honey.
