Ingredients
1 egg, well beaten
1 tsp butter
1-inch square of Blue Cheese crumbled
2 slices sweet onion, red or Vidalia
honey
a small sprig minced parsley
pinch of dried rosemary (optional)

2.5-cm square of Blue Cheese crumbled

Instructions
- Heat a skillet.
- Add butter and sauté onions and pears over medium heat until pears caramelize and onions are translucent. Remove to a plate.
- Put beaten egg in pan and tip from side to side, pulling back a little so liquid will run from surface.
- Add blue cheese and then pear mixture.
- Fold omelet and transfer to a plate.
- Sprinkle with parsley and add a tiny drizzle of honey.
