2 cups pecan flour*

1 cup almond flour

½ cup apple sauce or honey

⅓ cup melted butter

2 large eggs

1 tsp baking soda

½ tsp sea salt

120 ml apple sauce or honey

80 ml (113 grams) melted butter

2 large eggs

1 tsp (5 ml) baking soda

½ tsp (2.5 ml) sea salt

Instructions

  • Preheat oven to 350°F (180°C).
  • In a food processor, put eggs, butter, apple sauce, baking soda, and salt.
  • Process until mixed thoroughly. Add nut flours and process until flour is incorporated.
  • Scoop into muffin tins and bake at 350°F (180°C) for about 25-30 min.

Notes

*Pecan flour is not as fine as other nut flours. You can easily make pecan flour from whole pecans by processing in a food processor until the texture is a smooth crumble.
