105 grams dry curd cottage cheese
50 grams almond flour
2 tsp Kosher salt (less if regular salt)
pepper
nutmeg, pinch or more to taste

Instructions
- Preheat oven to 375°F (190°C).
- Place cauliflower in a clean tea towel and twist ends to remove liquid.
- Sauté onions in oil on medium heat until golden brown and caramelized.
- Blend eggs, dry curd cottage cheese, seasonings, and baking soda together in a food processor until texture is very smooth.
- Mix all ingredients together and put mixture into a well oiled 8x8x2-inch (20.3x20.3x5.1-cm) Pyrex pan.
- Bake at 375°F (190°C) for 50-55 minutes or until browned.
- Cut into squares to serve. Enjoy.
