2 small or medium zucchini, coarsely shredded

Instructions
- Sauté nuts in butter until lightly browned (be careful not to burn.)
- Remove nuts from heat.
- Sauté zucchini briefly--about 1-2 minutes in the same pan.
- Sprinkle with a few drops lemon juice and season with salt and pepper
- Add nuts, toss and serve. YUM!
