1½ tsp garlic minced
½ cup onion sliced
1 cup tomatoes diced
1½ TBSP basil (fresh chopped) (or use 1 tsp dried)

200 grams tomatoes diced
1½ TBSP (22 ml) basil (fresh chopped) (or use 1 tsp [5 ml] dried)

- Heat oil in heavy skillet.
- Add zucchini, onion, garlic.
- Cook until just soft.
- Toss in tomatoes and seasoning.
- Cook 2 minutes.
- Remove from heat and sprinkle with cheese.
- Serve warm (optional: with chicken or pork if compliant with dietary needs)
