Ingredients
9 ounces spinach leaves
1 endive (or other green)
1 cup Manchego cheese (aged cheese)
Dressing for Spinach Salad
ingredients
2 TBSP white wine vinegar
3 TBSP honey -- local is best
1 TBSP extra-virgin olive oil
¼ cup peeled and chopped shallots
⅛ tsp pepper
255 grams spinach leaves
1 endive (or other green)
1 cup Manchego cheese (aged cheese)
Dressing for Spinach Salad
ingredients
2 TBSP (30 ml) white wine vinegar
3 TBSP (45 ml) honey -- local is best
1 TBSP (15 ml) extra-virgin olive oil
¼ cup peeled and chopped shallots
⅛ tsp (0.625 ml) pepper
Instructions
- Chop the spinach and endive leaves to the desired size.
- Sprinkle the cheese on top.
- Toss with dressing and serve.

- Blend all the dressing ingredients together in a food processor until smooth.
