Ingredients

3 cups dried apple rings (no additives)

1 cup dried apricots (no additives)

2 whole vanilla beans, sliced open lengthwise, seeds scraped and reserved

1 lemon, zested, 1 tsp reserved

½ lemon, juiced

¼ cup coconut oil

½ cup finely shredded coconut

A pinch of sea salt

Instructions

  • Add the apple rings, apricots, vanilla bean seeds, lemon juice, lemon zest (reserving 1 teaspoon for later), and coconut oil to a food processor. Process on high until thoroughly combined and sticky, about 1-2 minutes. Set aside.
  • In a small bowl, combine the shredded coconut, sea salt, and reserved lemon zest and stir to combine.
  • Using your hands, form the apple mixture into small balls, about the size of 2 tablespoons, and roll through the coconut mixture before placing on a plate. Once all of your "bites" are formed, place them in the refrigerator for 20 minutes to harden. Keep refrigerated before serving, or they will melt.
