Instructions

  • Peel the hard boiled eggs and cut in half lengthwise.
  • Scoop out the yolks and transfer to a medium bowl.
  • Cut the avocado in half and remove the pit.
  • Scoop the flesh into the bowl with the egg yolks.
  • Add the lemon juice, salt and pepper to the bowl.
  • Use a fork to mash all of the ingredients together until combined.
  • Fill each of the egg halves with some of the avocado mixture.
