1 can full fat coconut cream

⅓ cup honey or maple syrup

¼ cup lime juice

Instructions

  1. Blend all ingredients in a blender, pour into a silicone ice cream pan and freeze for at least 4-6 hours. If frozen for longer than that, you may want to let it thaw for 10-15 minutes before scooping.

You can play around with different variations of this ice cream:

  • Add 2 tbsp of cocoa powder to make a chocolate avocado ice cream
  • Add more mint leaves or some peppermint extract to make a mintier ice cream
  • If you love nuts, some chopped up pistachios would taste great folded in to the ice cream

You can even put these into popsicle molds for a fun treat for the kids!
