Jamaican Jerk Chicken

Ingredients

4 Lbs. chicken breast or thighs, bone in, skin on; or a whole chicken broken down

1 tsp salt 

½ tsp pepper 

1 batch of Jamaican Jerk Marinade (reserve ½ cup) 

Lime wedges, for garnish

Jamaican Jerk Marinade

ingredients

4 Scotch bonnet peppers (if available, can substitute habanero), seeded

½ cup scallions, (or green onions) roughly chopped

10-12 cloves garlic, peeled

2 TBSP ginger, peeled, roughly chopped

¼ cup honey

¼ cup pineapple juice, no sugars added, not from concentrate (optional)

2 oz. lime juice, fresh, about 2 limes

12 sprigs thyme

10-12 allspice berries (if available, can substitute 2 tsp. ground allspice)

3-4 bay leaves

2 TBSP bone broth

1 TBSP apple cider vinegar

2 tsp ground nutmeg

1 ½ tsp kosher salt

1 tsp black peppercorns

1 tsp ground cloves

1814 gram chicken breast or thighs, bone in, skin on; or a whole chicken broken down

1 tsp (5 ml) salt 

½ tsp (2.5 ml) pepper 

1 batch of Jamaican Jerk Marinade (reserve 120 ml) 

Lime wedges, for garnish

ingredients

4 Scotch bonnet peppers (if available, can substitute habanero), seeded

50 gram scallions, (or green onions) roughly chopped

10-12 cloves garlic, peeled

2 TBSP (30 ml) ginger, peeled, roughly chopped

85 gram honey

59 ml pineapple juice, no sugars added, not from concentrate (optional)

57 ml lime juice, fresh, about 2 limes

12 sprigs thyme

10-12 allspice berries (if available, can substitute 2 tsp. ground allspice)

3-4 bay leaves

2 TBSP (30 ml) bone broth

1 TBSP (15 ml) apple cider vinegar

2 tsp (10 ml) ground nutmeg

1 ½ tsp (7.5 ml) kosher salt

1 tsp (5 ml) black peppercorns

1 tsp (5 ml) ground cloves

Instructions

  1. Gather and prep ingredients.
  2. Score skin on chicken and season with salt and pepper.
  3. Reserve ½ cup (120 ml) of marinade. Pour rest of the marinade over chicken and rub under skin. Refrigerate for 12 hours.
  4. After time has elapsed, remove chicken from the fridge.
  5. Heat the grill on medium-high heat.
  6. Season the chicken with salt and pepper if desired.
  7. Brush avocado oil on the grill. Grill chicken skin side down first. Let char for 10-12 minutes, covered.
  8. Flip chicken and continue to cook 4-5 minutes per side or until internal temperature reaches 165°F.
  9. Remove from the grill and rest for 5 minutes.
  10. Baste with reserved marinade, add lime wedges.
  11. Serve immediately and enjoy!

instructions

  1. Gather and prep ingredients.
  2. Add all ingredients to a high-speed blender or food processor.
  3. Process until smooth, 1-2 minutes.
