Ingredients

For spice mix:

4 cloves

4 cardamom pods

¾ cinnamon stick, ceylon or cassia

2 black peppercorns 

For Masala Chai: 

1 ½ cups water 

1 tsp ginger, grated 

2 ½ tsp black tea, loose, good quality 

1 TBSP honey 

1 cup cashew milk, no thickeners or added sugar

360 ml water 

1 tsp (5ml) ginger, grated 

2 ½ tsp (12.5 ml) black tea, loose, good quality 

1 TBSP (15 ml)  honey 

240 ml cashew milk, no thickeners or added sugar

Instructions

  1. Gather and prep ingredients.
  2. We will start by making our spice mix. In a mortar and pestle or spice grinder, add all ingredients for spice mix.
  3. Crush or blend until powder, set aside.
  4. In a small pot add spice mix, water, ginger, and black tea. Bring to a boil and then reduce to a simmer for 2-3 minutes.
  5. Add honey, and stir to dissolve.
  6. Next, add cashew milk. Bring mixture to a boil and then reduce to a simmer for 2 minutes or so.
  7. Once you see a film on top we will turn the heat to low and using a ladle scoop and steadily pour the mixture back into the pot to aerate a few times to incorporate all the ingredients and give a smoother texture.
  8. Strain liquid into serving cups using a mesh strainer or cheesecloth.
  9. Serve immediately, and enjoy!
