2 red lentil tortillas (fresh or frozen) (see related recipes)

compliant marinara sauce

shredded aged monterrey jack or provolone cheese

pizza toppings of choice

Instructions

  • Place two 6-inch red lentil tortillas in the toaster oven on TOAST.
  • Watch carefully. When brown spots start to appear in the center (not edge) of the tortilla, remove from the toaster oven (careful, because the tortilla will start to burn shortly after center brown spots appear).
  • Top with marinara, toppings, and cheese.
  • Put back in the toaster oven and toast until the cheese starts to melt.

Notes

Be sure the provolone or Monterey Jack cheese is aged. Many dairy companies sell these varieties as processed cheese instead of aged cheese, so always contact the manufacturer if no age time is provided.
