Ingredients

1½ cups onion, yellow or white, diced and sauteed

8 cloves garlic, minced

48 oz ground turkey

1½ cups almond flour

2 TBSP tomato paste, no additives

1 TBSP red wine vinegar

1 TBSP apple cider vinegar

2 TBSP honey

½ cup SCD ketchup (see related recipe)

2 tsp basil, dried

2 tsp oregano, dried

3 tsp parsley, dried

2 tsp salt

1 tsp black pepper, ground

1 cup SCD ketchup (for topping -see related recipe)

2 TBSP (30 ml) tomato paste, no additives

1 TBSP (15 ml) red wine vinegar

1 TBSP (15 ml) apple cider vinegar

2 TBSP (30 ml) honey

½ cup (117.5 g) SCD ketchup (see related recipe)

2 tsp (10 ml) basil, dried

2 tsp (10 ml) oregano, dried

3 tsp (15 ml) parsley, dried

2 tsp (10 ml) salt

1 tsp (5 ml) black pepper, ground

1 cup (235 g) SCD ketchup (see related recipe)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a sheet tray with foil, set aside.
  2. Next, heat a large skillet on medium and add in a drizzle of olive oil. Add onions and saute until cooked through and translucent.
  3. Add in garlic and sauté for 1-2 minutes until fragrant.
  4. Remove from heat and set aside.
  5. In a large bowl add all other ingredients for meatloaf including the onion mixture. Remember to only add ½ cup (118 ml) of the ketchup to the meatloaf mixture. Reserve the other cup for the top of the meatloaf.
  6. Mix thoroughly and place mixture on your sheet tray. Shape into a loaf.
  7. Bake for 40-45 minutes or until the internal temperature reaches 155°F (68 °C)
  8. Remove from the oven and brush on the remaining cup of ketchup.
  9. Return to the oven for 10 minutes or until the internal temperature reaches 165°F (74 °C)
  10. Remove from the oven and rest for 10 minutes.
  11. Slice into 8 pieces and serve immediately. Enjoy!
