4 cups almond flour
2 cups hazelnut flour
½ cup honey
1 egg
½ tsp cinnamon
½ tsp ginger
¼ tsp nutmeg
½ tsp baking soda
1 cup Homemade Applesauce (see Related Recipes)
oil/ghee for greasing pan*

220 grams hazelnut flour
118 ml (170 grams) honey
1 egg
½ tsp (2.5 ml) cinnamon
½ tsp (2.5 ml) ginger
¼ tsp (2.5 ml) nutmeg
½ tsp (2.5 ml) baking soda
240 ml Homemade Applesauce (see Related Recipes)

Instructions
- Preheat the oven to 325°F (165°C or gas mark 3).
- Whisk all the ingredients together in a mixing bowl. The batter/dough consistency should be firm and release easily (not sticky).
- Grease a sheet pan with oil or ghee, and roll out batter onto it.
- Press dough down so it is flat. Allow it to bake in the oven for 10-15 minutes, or until golden brown on edges. Cut into squares before it cools down.

This classic American cracker has been recreated with applesauce as a base for the missing dairy. The mixture of the two nut flours gives it a nice, varied consistency. *Use oil instead of ghee if dairy-free
