1 cup coconut flour
½ tsp baking soda
½ tsp orange zest
2 eggs
1½ cups Homemade Applesauce (see Related Recipes)
¼ cup raisins
1 cup SCD-safe or fresh-squeezed orange juice to moisten

240 ml SCD-safe or fresh-squeezed orange juice to moisten

Instructions
- Preheat oven to 350°F (180°C or gas mark 4).
- Mix all ingredients together in a food processor. If the consistency is too sticky, use more applesauce or orange juice to moisten. (The coconut flour can bind easily and therefore you might need more juice or applesauce to moisten).
- Pour the batter in a glass baking dish or pie pan and allow to bake for 30-40 minutes at 350°F (180°C or gas mark 4).
- Remove the blondies when a knife comes out clean.

Blondies are a part of the rituals of growing up: devouring them after a sports practice, at a moms-only tea party, at family gatherings and reunions. We have created this SCD version that melts in your mouth despite having no dairy or honey. The natural sweetness is derived from the raisins and applesauce.
