Ingredients
4 TBSP olive oil, divided
4-5 garlic cloves, peeled and minced fine
1 tsp ginger, peeled and minced fine
6-8 chives, chopped fine
salt and black pepper to taste
2 pounds butternut squash, peeled, seeded, and cut into small ¼-inch cubes
4 TBSP (60 ml) olive oil, divided
4-5 garlic cloves, peeled and minced fine
1 tsp (5 ml) ginger, peeled and minced fine
6-8 chives, chopped fine
salt and black pepper to taste
900 grams butternut squash, peeled, seeded, and cut into small 0.6-cm cubes
Instructions
- Preheat oven to 350°F (180°C or gas mark 4).
- Grease a sheet baking pan with 2 TBSP (30 ml) of the olive oil.
- In a small bowl, mix together the remaining olive oil, garlic, ginger, chives, salt, and pepper.
- Spread the butternut squash cubes evenly on the pan.
- Rub the prepared oil-herb mixture onto it.
- Bake at 350°F (180°C or gas mark 4) till squash is golden-brown on the edges, and cooked through on the inside.
