Ingredients
1-pound haddock fillet
salt and black pepper to taste
4 sprigs fresh sage
4 sprigs fresh mint
½ cup water
10 cloves garlic, peeled and minced fine
4 pieces of ginger, 1-inch thickness, peeled and chopped into flat slices
1 lemon, juiced
440-gram haddock fillet

Instructions
- Clean fish and pierce it with a fork.
- Rub salt and black pepper on all sides.
- Put the haddock in a large shallow stovetop pan on medium heat.
- Place the sage and mint over the fish, then add the water.
- Add in garlic and ginger pieces, and pour lemon juice over the fillet.
- Cover the pan and cook over high heat for 5-7 minutes.
- Then simmer for another 10 minutes, or until fish is flaky and cooked through.

This recipe was passed down to us from our family in Mumbai, where outings to buy fish involved an age-old Victorian covered market and haggling with numerous women dressed in saris and gold jewelry, calling you over to buy fish from their stalls. We first tried this in our original cookbook Adventures, and liked it so much we wanted to refine it further. This is a steamy, moist fish that can be prepared on the stovetop rather than in the oven. -Nilou
