Instructions
- Beat egg yolks.
- Add ground almonds, salt, and lemon rind to yolks and mix.
- Fold in stiffly beaten egg whites.
- Heat oil 1-inch (2.5-cm) deep in skillet.
- Drop batter by teaspoonful into skillet and fry until golden brown.
- Drain on brown paper.
- Serve in soup.
