2 cups cooked chicken, cubed or shredded

Alfredo Sauce

2 cups water
½ cup cashew butter
1 tsp garlic powder
½ tsp salt
3 TBSP unsalted butter
1 cup grated parmesan cheese
280 grams cooked chicken, cubed or shredded

Zucchini Spaghetti Noodles

3 zucchini*
2 TBSP (30 ml) olive oil
salt and pepper to taste
Alfredo Sauce

470 ml water
125 grams cashew butter
1 tsp (5 ml) garlic powder
½ tsp (2.5 ml) salt
3 TBSP (45 ml; 42 grams) unsalted butter
90 grams grated parmesan cheese
Instructions
- Prepare the alfredo sauce as described above.
- Combine the cooked chicken breast with the Alfredo Sauce.
- Prepare the zucchini spirals as described above.
- Spoon sauce and fresh basil over zucchini noodles and gently combine.
Zucchini Spaghetti Noodles

- Using a spiralizer, spiralize the zucchini into noodles.* (If disease is active, peel the zucchini).
- Cut the noodles into spaghetti length strands.
- Heat a large skillet on medium and add the olive oil.
- Add the spiralized zucchini to the pan, tossing in the oil.
- Add salt and pepper to taste.
- Cook for about 3 minutes - until noodles are slightly soft but still have bite and texture.
Alfredo Sauce

- Add water and cashew butter to a saucepan.
- Blend with an immersion blender until cashew butter and water are evenly combined (or blend in a regular blender and then transfer to a saucepan).
- Stir in garlic powder and salt.
- Heat on medium heat and stir constantly.
- When liquid starts to get warm, add butter.
- Gradually add parmesan and stir until melted into the mixture.
- Do not overheat as mixture will thicken too fast. If mixture overthickens (you want it runny, not pasty), add a little water until it is back at the right consistency.
