Ingredients
1 cup frozen Montmorency red cherries
juice of about 6 limes (about ⅓ cup)
⅓ cup water
¼ cup honey or to taste
¼ cup gelatin
165 grams frozen Montmorency red cherries
juice of about 6 limes (about 80 ml)
80 ml water
60 ml (85 grams) honey or to taste
38 grams gelatin
Instructions
- In a blender cup (or regular blender) add the cherries, lime juice, water, and honey.
- Blend until smooth.
- Pour mixture into a saucepan and add the gelatin.
- Whisk the mixture as it heats.
- Heat for about 10 minutes.
- When the mixture is thin and smooth, remove from heat. The top of the mixture may be foamy.
- Use a candy dropper to suck the liquid up from the bottom of the pan into the dropper (this leaves the foam behind while sucking up the red liquid).
- Release the liquid into a silicone candy mold cavity.
- Fill cavities until all the liquid is used up.
- Transfer the molds into the refrigerator and let set.
- Once set, remove the candies from the molds and place in a storage container. Keep refrigerated.

Feel free to experiment with other fruits, particularly berries (you may need to strain the seeds after blending if using berries). Amount of honey may need to be adjusted, depending on how sweet or sour your fruit of choice is. Select a juice that complements your fruit. You may use ⅔ cups of juice with no water if your juice is not overpowering. I chose to water down the lime juice so it doesn't overwhelm the cherry flavor.
